Asian Chicken Soup
This soup is so easy and fast, it is also very high in protein and low in carbs and fat. You can add any vegetables to this soup to kick it up, I am going to keep it very simple and light.
8oz cooked chicken breast sliced
4 cups fat free chicken broth
2 tsp soy sauce
½ tsp ginger minced
2 cloves garlic minced
1 cup spinach chopped
2 scallions sliced on angle
1 tsp peanut oil
¼ tsp sesame oil
Pepper to taste
Place medium sized sauce pan on med high heat. Once pan comes to temperature add peanut oil garlic and ginger and sauté for about 1 minute until garlic is cooked but don’t brown the garlic. Add chicken stock, soy sauce and cooked chicken and bring to a boil. Reduce heat to a simmer and add spinach and scallions and let simmer for 2 minutes. Place 2 cups of broth and half the chicken in a bowl and add sesame oil. This recipe makes 2 servings.
