Balsamic Rosemary Beef Skewers
This beef skewer has a very rich deep earthy flavor. If you aren’t watching your fat intake too closely switching the eye of round to beef tenderloin would double the fat but also kick up the flavor.
Marinade:
2 tbsp chopped fresh Rosemary
1 tbsp Dijon Mustard
5 cloves of Garlic chopped
2 tbsp Lemon Juice
2 tbsp Balsamic Vinegar
¼ cup Olive Oil
½ tsp Salt
1 tsp Freshly Cracked Black Pepper
In a bowl combine above ingredients and mix well. To this you will add 1.5lbs Eye of Round cut into approximately 1” cubes. Let marinade for 2 hours or more.
Once the beef has finished marinating you will place 6oz of beef on the skewer with vegetables. As far as vegetables go for the skewer you can add whatever you like, I have added to following to each skewer:
¼ Green Bell Pepper
¼ Red Bell Pepper
2 Cremini Mushrooms
¼ Red Onion
Place the skewer on the BBQ over high heat for approximately 10-15 minutes depending on size of beef cubes and desired wellness and turn every couple minutes. You might want to add salt and pepper to taste once cooked.
