Chicken/Fruit curry salad


This is sweet and tangy with a very fresh cool taste, ideal for a hot summers day .

In a bowl combine:
2” section of cucumber cubed
½ a Gala apple (or any sweet apple) cubed
3oz cooked chicken cubed
1 tbsp Golden raisins
1 tbsp Sultan raisins
2 tbsp roasted unsalted cashews

In another bowl combine:
1 tbsp ½ fat mayo
1 tbsp fat free plain yogurt
1.5 tbsp cold water
1 tsp medium curry powder

Pour dressing over fruit and chicken and toss lightly, top with chopped parsley and serve (this is even better if it sits for a while to let the flavors marry).

Stats 27.4g of Protein, 39.9g of Carbohydrates, 16g of Fat
