Smoked Ham and Sweet Potato Frittata
1 cup Chopped Onion
1.5 cups 1/4” Cubed Yam
5oz Maple Leaf Country Kitchen Smoked Ham
1 tsp Chopped Garlic
¾ cup Egg Whites
3 Whole Eggs
2 tbsp Chopped Basil
¼ cup “Light” Grated Parmesan Cheese
Salt & Pepper to taste
In a 9.5” med high pan cook yam, onion and ham until yam is cooked (about 7-10 minutes). When almost cooked add garlic and cook another minute. Add salt and pepper to taste.
While above is cooking mix together eggs, egg whites, basil and parmesan cheese. Once yam and onion is cooked mix egg mixture into pan. Stir until frittata is almost set and place under broiler to finish cooking. Top should be slightly browned.
