Italian Chicken Pasta Salad


This is a hearty but light salad that will give you plenty of energy

Vinaigrette (0g of protein, 2g of carbohydrate, 14g of fat):
1 tsp minced fresh rosemary
1 tsp minced garlic
1 tsp Dijon mustard
1 tsp lemon juice
½ tbsp red wine vinegar
1 tbsp 3/6/9 oil or olive oil
1 anchovy fillet minced (I know, but trust me you wont know its there)
salt and pepper to taste.

In a bowl combine:
1 cup cooked whole wheat pasta
3 pieces of canned artichoke 1/4s, drained
2.5oz cooked chicken
1 tbsp sun dried tomato chopped
1 tsp fresh chopped Italian parsley

Pour in ¾ of vinaigrette, toss, put a couple of thin parmesan cheese slices on top and serve.

Stats 30.5g of Protein, 43.2g of Carbohydrate, 14.6g of Fat
