Tarragon Citrus Chicken Skewers
This chicken skewer has a very bright citrus flavor and zing. This recipe will also work well with many kinds of seafood to replace the chicken, if you go with seafood you will not require such a long marinade time, 20 minutes would be plenty.
Marinade:
1 medium Orange, juice and zest
1 Lime, juice and zest
½ medium Lemon, juice and zest
2 tbsp Fresh Tarragon chopped
5 cloves of Garlic chopped
¼ cup Soy Sauce (use light soy if watching sodium intake)
¼ cup light flavored oil like Canola
½ tsp Salt
1 tsp Freshly Cracked Black Pepper
In a bowl combine above ingredients and mix well. To this you will add 1.4lbs Skinless chicken breast cut into approximately 1” cubes. Let marinade for 2 hours or more.
Once chicken has finished marinating you will place 5.5oz of chicken on skewer with vegetables. Again, you can use any vegetables that you want, I used the following vegetables:
¼ Green Bell Pepper
¼ Red Bell Pepper
¼ Yellow Bell Pepper
¼ Red Onion
2 whole Cloves of Garlic
Place the skewer on the BBQ over high heat for approximately 10-15 minutes depending on size of chicken cubes and turn every couple minutes. You might want to add salt and pepper to taste once cooked.
The stats for this skewer are, 35.8g of Protein, 8g Carbohydrates and 5.2g of Fat.
